Thanksgiving Ultimate Candied Sweet Potatoes

Thanksgiving is upon us but that doesn’t really matter because this is a dish that the entire family can enjoy all year long. It’s a Thanksgiving Ultimate Candied Sweet Potato dish that meets to of my cooking requirements.  First, wholesome ingredients and second, it’s so easy I don’t even break a sweat!

This recipe has a third added benefit and that is that the house smells so good! You know when you just walk through that door and the smell of cinnamon and sugar just feels the air? Maybe there is some pre Christmas tunage playing…yes you heard me right…because I just do think there is much more that can bring joy to the heart than that of a nummy meal cooking and it was SIMPLE and the aroma feels the air and that meals brings your family together. How powerful and the best part dinner cleanup is going to be easy. Much joy and love to you and yours!

1-2 lbs of Organic Sweet Potatoes-peeled and diced into small cubes

½ Cup Organic coconut oil melted

1-2 drops doTERRA cinnamon bark essential oil

Salt and pepper to taste

1 C pecan halves or other nut

cinnamon-essential-oil

Preheat oven or grill to 425 degrees. Roasting these sweet potatoes brings out all of the natural sugars in the potatoes making this an amazing “candied” like dish.

In a large bowl or Ziploc bag place diced sweet potatoes, melted coconut oil and cinnamon oil in bag.  Shake and mix around tell everything is well coated.

Place sweet potatoes on cookie sheet lined with parchment paper. Use fresh sea salt and pepper to taste.

Place cookie sheet in oven and mix and rotate potatoes about every 10 minutes.  After 20 minutes sprinkle nuts on the cookie sheet as well as mix well into the potatoes.  Cook until edges of potatoes are golden brown. Enjoy!
